Ever crave Chocolate Chip Cookie Dough? So much so that you’re tempted to bake up some chocolate chip cookies just to eat the dough? I’m guilty of this. I absolutely love raw chocolate chip cookie dough. Especially with mini-chocolate chips. This is why I just had to create this Keto Chocolate Chip Cookie Dough recipe.
Now… it's not actually cookie dough. It's not meant to be baked into cookies. It's meant to be eaten…like you would raw cookie dough! This is a quick and easy whipped dessert you can create when the craving strikes.
When we started eating a ketogenic diet to improve our overall health and support our microbiome– my husband and I both initially had a lot of despair over not being able to eat things like cookies and cookie dough. After doing some experimenting in the kitchen, I quickly realized that this was not going to be the case.
I wanted this recipe to be more than just another low carb recipe. It needed to easy and quick to whip up when a craving struck. (although, i have to admit, the lack of cravings is kind of….well…. Crazy. But, that’s a story for another post!)
I experimented with different sweeteners. Many of them resulted in a grainy taste and i just couldn’t get that brown sugar flavor to pop. The taste-test winner was a little used ingredient called molasses. It’s important to use the right kind of molasses and not the processed stuff you’ll find at the local market. I’ve linked to the correct molasses at the bottom of this post and in the recipe. You want to use unsulphured blackstrap molasses. I order this online.
My taste testers are kind of sad that I’ve finished this keto recipe. However, they won’t be disappointed for long because I have a lot of yummy recipe ideas!
Another “secret” ingredient in Keto Chocolate Chip Cookie Dough is the vanilla. I grew up baking with Watkins Vanilla. There’s just something about it that sets it apart. It’s still my absolute favorite vanilla. Today, I don’t use the ‘baking’ vanilla — I use Watkins Pure Vanilla in my recipes. I have been testing out a few other vanilla’s and you’ll see them in a few of my recipes. However, when I am making something like this where the vanilla flavor needs to shine– I’ve just gotta have my Watkins.
To make this keto chocolate chip cookie dough, you’ll need cream cheese, butter, unsulphured blackstrap molasses, Watkins pure vanilla extract, stevia and some dark chocolate. You want to find a dark chocolate greater than 70% and use it in moderation. I find that about .25 ounces, after it’s chopped up, is plenty for this dessert. If you use unsalted butter, throw in a pinch of salt as well.
You may notice that I’m fairly particular about my ingredients. I use Organic salted butter, cream cheese that is labeled “from cows not treated with rBST” and organic chocolate. I try to use as many high quality ingredients as possible–and that makes a big difference in my end result. (And in our personal health!)
