- Melt the unsweetened chocolate and coconut oil in the microwave or double boiler.
- In a food processor or blender, combine the remaining ingredients and blend until smooth.
- With processor/blender running, drizzle in the chocolate-oil mixture
- Serve immediately or store in the refrigerator for up to 3 days.
As this pudding chills it becomes thicker & creamier like a chocolate frosting. In fact, it can be used as frosting on cupcakes!
