This naturally low carb recipe for french cut green beans with toasted sliced almonds is a family favorite dating back to my childhood.

In fact, before I filmed this recipe I chatted with my mom and asked her for tips!

She recommended I take the time to toast the almonds in a little oil (I chose avocado oil) before tossing them with the green beans.

Some of my earliest holiday memories revolve around this dish at the dinner table!

This is a great way to dress up green beans for Easter, Thanksgiving, Christmas or any other celebration throughout the year.

Are Green Beans Keto?

Some will tell you that green beans aren't acceptable on a keto diet because they are a higher-carb count vegetable.

I disagree.

One cup of green bean pieces has a total of 7 grams of carbohydrate. 3.4 of those grams are fiber. Which leaves 3.6 grams of carbohydrate in a cup of green beans.

I strongly believe that vegetables have a place in our diets and that we shouldn't let carb counts scare us away. Vegetables are nutrient dense and provide needed fiber in our diet.

Should you eat 5 cups of green beans?? No… but who does that??

Instead, stick to a half to one cup of green beans on your plate and include a second vegetable in there as well.

Keto French Cut Green Beans with Sliced Almonds

This low carb green bean recipe is elegantly simple and a family favorite! We use this elegant keto side dish at Easter, Thanksgiving, Christmas and any time we have a family celebration. The best part is, you can have these ready in about ten minutes!

Instructions

  • In a 3 quart saucepan, bring ⅓ cup water to boil.
  • Add frozen green beans to the pan and stir. Cover and cook 5-6 minutes, stirring occasionally.
  • Drain the water from the green beans.
  • Toss with butter and salt and cover. Set aside.
  • Toast ½ cup sliced almonds in a skillet on medium high heat. Stir constantly and watch for the almonds to be lightly toasted.
  • Toss toasted almonds with green beans and serve immediately.
