This is an easy chicken crock-pot recipe. You can use this to make burritos, tacos, enchiladas as a topping for taco salads or a filling for lettuce wraps!

Ingredients

Optional Add­ In’s:

  • 1 cup mushroom
  • 1 cup peas (frozen)
  • 1 cup cilantro (fresh or dried)
  • 1 cup Beans (extra)

Instructions

  • Place all ingredients except frozen vegetables in your crock-pot.
  • Turn crockpot on Low
  • Cook on Low for 6 hours and check. Chicken should pull apart easily. (Estimated cooking time 6 - 8 hours)
  • Once cooked, shred chicken and add frozen vegetables and extra salsa to taste.

Notes

Serving suggestions:
Dollop with plain greek yogurt
Crumble a tortilla chip (just 1 or 2) on top
Lightly sprinkle cheese on top
Enjoy over a bed of spring lettuce
