I should have called these “disappearing keto salami roll ups” because they don't last long around our home or at any party we take them to.
To make things easier on yourself, soften your cream cheese either by leaving it out on the counter for a few hours or warming it in the microwave. This makes it much more spreadable and easy to work with.

When purchasing salami, ask about the ingredients and avoid salami with sugar near the beginning of the ingredients list.
If you ask, your deli should help you find a lower sugar option.
You will find sugar in most processed meats as it's used as a curing agent.

Ingredients for Keto Salami Roll-Ups
Most of the ingredients in this recipe, you can find at your local grocer!
When you choose your salami, ask to see the ingredients list. Look for a salami that has sugar as one of the last ingredients on the list.
You will find sugar in most processed meats (salami, bacon, sausage) because it's used as part of the curing process.
You'll be ok as long as you choose a low-sugar option.
The same rule applies with the pickles. Read your ingredient list and look for hidden sugars. Choose a no sugar added option.

These will be roughly 1 carb per-roll-up if your batch makes 16-24 roll ups. For less carbs, use less cream cheese!! You can make these with half the called for cream cheees.
I recommend using Cronometer if you are strict keto to calculate the facts with your specific ingredients.
